2 Minute Fudge

2 Minute Fudge 1 box of 1 lb (or bag) of powdered sugar 1/2 C of cocoa 1/4 t salt 1/4 C milk 1 T vanilla extract 1/2 C (1/4 #) butter (that's one stick folks) 1 C chopped nuts (optional) (okay, not really, it's better with nuts!) In 1 1/2 quart casserole dish (I use a big glass bowl) stir together sugar, cocoa and salt. Add milk and vanilla. (here it says to stir together until partially blended. I don't. It's fine.) Put butter over top in center of dish. Microwave on High for 2 minutes, until milk feels warm on bottom of bowl. Stir vigorously until smooth. Blend in one cup nuts. Pour into wax paper lined dish (8X4X3) Chill one hour. This is a soft rich fudge that is best kept in the fridge. I've found that sometimes the little clumps of powdered sugar don't break up in the mix. So my fudge has little white balls in it. Still tastes good. Someday I'll make the sugar super fine in the food processor to correct this problem. But too lazy so far. It

I was catching up on a couple of blogs I like to read when I suddenly felt convicted about the lack of posts on my own blog. Now, granted, most of the time I have more important things to do. Like shower, which doesn't happen often enough. Like chase a munchkin, or a cat, or loads of laundry, dishes and unfinished craft projects. Truth is, I often have ideas of things to blog about. Like the weather. The massive amounts of rain, wind and crazy flooding. Then I convince myself that it's "boring" and don't. Besides I could be eating fudge instead. And really, everyone should be eating fudge instead. Which is another idea... share my 2 minute fudge recipe with the world. I mean, the five people who sometimes read this blog when there are new posts and they remember to check it. But even then, if they made it, that would mean that the world would have five people that are that much happier.
